History & tradition: because of the purity of its air, Volnay was apparently the favourite residence of the ladies at the court of the Duke of Burgundy. The other attraction was of course the charm of its wines.

Vinification Details
Maceration and vinification take 2/3 weeks indigenous yeasts maceration and fermentation temperatures under total control. Joseph Drouhin has the process of extraction; extraction gives colour and substance. \Pigeage punching down of the cap during fermentation: once a day until half of fermentation is done; one pumping over per day till the end of the fermentation. Vertical pressing; separation of free run juice from pressed juice.
