Directions

Fluffy Coconut Pancakes Recipe

You will need:

• 4 medium eggs
• 180ml coconut cream
• 60ml whole milk
• 2 teaspoons vanilla extract
• 1 tablespoon honey
• 100g coconut flour
• 1 teaspoon baking powder
• 1/4 teaspoon sea salt
• Coconut oil or butter for frying.

Method:

1. In a small bowl beat eggs until frothy for about two minutes. Then mix in the milk, vanilla and honey.
2. In a larger bowl combine coconut flour, baking powder and sea salt then whisk together. Add in the wet mixture and mix well. Allow to sit for 3-5 minutes.
3. Grease pan with butter or coconut oil and heat. Ladle a few tablespoons of batter into pan for each pancake. Spread out slightly with the back of a spoon. The pancakes should be approx. 8cm inches in diameter and 1cm thick.
4. Cook on a low heat for around 4 mins, until the bottom of the pancakes turn brown. Flip and cook an additional 2-3 minutes.
5. Serve with honey, syrup, fruit or PURO chocolate spread!

Once opened, store in an airtight container.
