Storage: Store in a cool, dry place out of direct sunlight. Once opened, re-seal, keep refrigerated and consume within 2 days for soft corn tortillas and enchilada sauce.
Preparation and Usage: Preheat oven 200°C / 392°F / Fan 180°C / Gas Mark 6. Cut 500g of chicken, 2 peppers and 1 onion into thin strips. Heat 2 tbsp vegetable oil in a large frying pan until piping hot. Add the chicken and stir-fry for 6-8 mins until thoroughly cooked. Add the veg and continue to cook until they begin to soften. In a large measuring jug add 100 ml hot water, both sachets of tomato sauce and the seasoning sachet, stir until combined. Add half the jug contents to the frying pan, add 50g of grated cheese and stir through. Remove from heat. Spoon the cooked chicken and veg onto the centre of the tortillas and roll them up. Place tortillas fold down onto a lightly greased baking dish. Pour over remaining enchilada sauce and sprinkle over 100g of grated cheese. Bake for 10 mins.
