Usage:

• Ingredients needed: 3 medium eggs, 90ml vegetable oil (6 tbsp) or 100g melted butter, 180ml water or 180ml milk, 1 tub of Betty Crocker Zesty Lemon Icing (icing not included)
• Prep time: 10 minutes
• Baking time: 23-28 minutes
• Baking: Two 20cm cake tins or two 12-hole muffin/cupcake tins (and 24 cupcake cases)

Preheat oven to 180? (160? for fan assisted ovens)/Gas Mark 4. For cupcakes use fan assisted oven to 160?. Grease tins and preferably line base with baking parchment or greaseproof paper. For cupcakes line 2 regular muffin/cupcake tins with cupcake cases.

• 1. Beat cake mix, oil, water and eggs (or cake mix, butter, milk and eggs) in large bowl on low speed for 30 seconds; increase speed to medium for further 2 minutes (or beat for 3 minutes with large spoon or wire whisk). Do not eat unbaked batter.
• 2. Pour into tins. For cupcakes pour mixture evenly into the cupcake cases.
• 3. Bake for 23-28 minutes or until a skewer in the centre comes out clean. For cupcakes bake the 2 muffin/cupcake tins at the same time for 18-22 minutes. Cool for 10 minutes in tins then remove from tins. Cool completely, fill and ice with Betty Crocker zesty lemon icing.
