The NV Brut Rosé Champagne from Bollinger is the first new wine to come from House for more than 30 years; the last addition was the Bollinger La Grande Année Rosé which was introduced in the 1970s, so this is quite a move for Bollinger.
The Brut Rosé has been modelled on its Special Cuvée blend, combining the fruits of previous harvests with reserve wines from their cellars in Aÿ. The final component -which provides the pink colour and the delicate aromas - is a proportion of still red which comes from Bollinger's Grand Cru vineyards. Dry, intense, well-balanced and with a long finish, this is ideal for food.
