Vinification details: The grapes are harvested from end of August to mid September, according to precocity of the grape variety. The harvest is made by machine and during the night to avoid the big heats of the day. Each grape variety is vinified separately. The winemaking is very traditional, the grapes go for a gentle pressing and settling. The clearer juice ferments at low temperature in stainless steel tanks (12-14°C). No ageing in oak to preserve the fruitiness of the wine.
