The white wines of Sancerre are made from Sauvignon Blanc, but here in the eastern part of the Loire Valley the grape gives very different results. The grassiness is softer, riper, the perfumes gentler, the acidity racy as a tripwire. This wine, made by Firmin Dezat, is fermented in stainless steel tanks, so that the minerality comes to the forefront on the palate; the wine is scented with white flowers, herbs and citrus. It makes a beautiful match for shellfish, goat's cheese, Fortnum's Waxed Cheddar Truckle or asparagus.
