Vinification: The first fermentation is carried out at a low temperature to enhance its intense aroma. The final blend is decided by the winemakers after numerous tastings, and the second fermentation is done at a controlled temperature. Once the second fermentation is complete, the wine is cooled to 1ºC for optimal preservation and remains in contact with its fine lees until the moment of bottling.
