Autumn time and the cider making begins with the harvest of traditional varieties of cider apples from orchards across Herefordshire. The fruit is milled and pressed for juice, and this is left to ferment and slowly mature over the winter months. Spring arrives and the cider maker begins to taste and blend - balancing sweetness, acidity and strength. When the taste is 'just right' the cider is filtered for clarity and a little sparkle added prior to bottling. The finished cider is crisp and refreshing with flavours unique to the previous autumns harvest.
