Product Information Make authentic Sri Lankan Coconut Sambol (coconut and chilli relish). You'll be using our very own tried and tested family recipe (including our special spice mix) to become experts of this delicious sambol, a Sri Lankan staple. Contains mum's very own special spice blend, desiccated coconut and our easy to follow recipe. Just add onions, water, lime and salt, to produce a fragrant and tasty coconut sambol (also known as Pol Sambol in Sri Lanka). Eaten for breakfast, lunch and dinner in Sri Lanka, this sambol is great eaten with curries, bread, rice, roti, as a side, condiment or even in sandwiches! Can also be sprinkled over any dish to pack a punch on flavour! A versatile and easy to use kit which is truly authentic. Makes around 4 servings.

Preparation and Usage Preparation time: 15 minutes Serves: roughly 4 servings Ingredients provided: 50 grams of desiccated coconut, Hop & Roll spice mix Ingredients you will also need: 1/4 red onion, 50 mls of water, juice of 1/2 lime, salt to taste Equipment you will also need: pestle and mortar

• 1. Finely chop the red onion.
• 2. Put the onion in a pestle and mortar, add the Hop & Roll spice mix, and pound until a coarse paste forms.
• 3. In a separate bowl add the water to the desiccated coconut and mix well.
• 4. Add the coconut mixture to the pestle and mortar and pound thoroughly until combined and the mixture is an even orange colour.
• 5. Stir in the lime juice, a little at a time so the sambol is not too sour, then season to taste with a little salt (around 1/4 tsp).
• 6. This sambol will keep in the fridge in an airtight container for up to 5 days.
