Storage: Store in a cool, dry place. Once opened, store in an airtight container.
Serving suggestion: For a hearty spelt risotto, sauté shallots and garlic until soft, then add chopped mushrooms. Mix in the dried spelt and a splash of white wine, then gradually add veg stock. Simmer until tender then stir through grated parmesan and fresh parsley. Season well and serve with lemon wedges.
Preparation instructions: Rinse thoroughly then place in a saucepan and cover with 3 x its volume in cold water. Bring to the boil and simmer for 12-15 minutes, until the spelt is cooked through with a slightly firm bite. Drain and serve.
