The 5000MCD series by MIYABI embodies the beauty and sharpness of Japanese knives. Each knife is a showpiece incorporating a unique 101-layer flower Damascus design. Santoku is the best-selling Japanese blade shape and the name translates as 'Three Virtues', these being meat, fish and vegetables. The flat cutting edge lends itself to a chopping motion rather than the rocking cutting movement of a typical European chef's knife.

The blade is honed on both sides using the Honbazuke technique to create an ultra-sharp finish. Every blade is honed by hand at a razor-sharp angle of 9.5° to 12°. The traditional D-shaped handle made from masur birch wood makes for an evenly balanced knife, making it easy for the user to stay in control and effortlessly cut up food. A prized material for knife handles, masur or Karelian birch is also the only wood ever used in a Faberge egg. Exquisite and ergonomic, the birch handle has an elegant end cap to add a finishing touch to the design.
