Made by the Salumificio Gombitelli from a whole shoulder cut of pork that is dry-rubbed, massaged, marinated in spices and then air-dried.
The position of this small Tuscan village plays a huge role in the making of this salumi: high altitude for drying, with just the right humidity levels.
