Preparation and Safety
Hot chicken curry - Serves 4
To cook on the hob.
Before cooking: Peel and slice 1 medium-sized onion. Crush 2 garlic cloves. Chop a good handful fresh coriander.
During cooking: Heat 2 tbsp of vegetable oil in a large non-stick saucepan. Add the onion and garlic, and fry over a moderate heat until soft and golden. Stir in 2 tbsp curry powder and 400g pack diced chicken breast. Brown for 2 minutes, stirring occasionally. Add 1/2 x 400g tin chopped tomatoes and 100ml water and simmer until sauce is thickened and chicken is cooked through.
After cooking: Remove from heat and stir in 100ml Greek-style natural yogurt. Season to taste, garnish with the coriander and serve piping hot with basmati rice. Check food is piping hot. All cooking appliances vary. This is a guide only.
