Preparation and Safety
Lemon loaf cake: 250g butter, 200g caster sugar, grated zest and juice of 1 lemon, 3 large eggs, 300g Sainsbury's Taste the Difference Extra Fine Sponge Flour. Lightly grease and line a 2lb loaf tin. Preheat the oven to 170°C (340°F, Gas mark 3). Place the softened butter, sugar, lemon zest and juice in a bowl and cream until white and fluffy. Whisk the eggs and gradually mix them into the butter and sugar mixture. Sift half the flour and fold gradually into the butter mixture with a metal spoon until it is completely incorporated. Repeat the process with the remaining flour. Spoon the mixture into the lined loaf tin. Bake for about 45 minutes to 1 hour, or until well risen and lightly golden. The top of the cake should spring back when it is ready. Remove from the tin and allow to cool. Dust the top with icing sugar, if desired.
