History
Grolleau Gris is a rare and distinctive grape variety. There are only about 150 hectares worldwide, with nearly 120 of them located in the Loire region. Primarily used for crafting delicate, aromatic sparkling wines, Domaine des Herbauges has transformed it into a grape variety that produces fresh, aromatic wines with low alcohol content.

Vinification
Machine harvested during the night to maintain freshness. Harvested a few weeks early to ensure lower potential alcohol. Following maceration and pneumatic pressing and settling, the racked off juice is then fermented at low temperature in underground tanks for two to three weeks depending on the vintage.
