Try this easy chicken curry recipe: heat 3 tbsp oil and fry 1 diced onion for 4-5 min. Stir in 2 tablespoons of curry powder, cook for 1 min, then gradually add a 400g tin of chopped tomatoes and simmer until the oil separates. Add 450g cubed chicken breasts, cook 2-3 min on high, then pour in 150ml warm water and simmer for 15 min until the sauce thickens. Season with coriander leaves before serving. Serves 2-4.
