INGREDIENTS: Sugar, Wheat Flour [Wheat Flour, Calcium, Folic Acid, Iron, Niacin, Thiamin], Fat Reduced Cocoa Powder (9%), Palm Oil, Rapeseed Oil, Dextrose, Raising Agents (Potassium Hydrogen Carbonate, Monopotassium Phosphate, Sodium Bicarbonate, Monocalcium Phosphate), Emulsifier (Mono- and Diglycerides of Fatty Acids).

WHAT YOU WILL NEED

• 3 medium eggs
• 100ml semi skimmed milk
• 40ml vegetable oil
• 2 x 20cm (8 inch) greased and lined round cake tins or 12 cupcake cases
• Cupcake or muffin tin

PREPARATION GUIDELINES

Cooking time: 15-25 minutes - Method: Oven

To make the sponge cake:

• 1. Pre-heat the oven to 180°C / Fan 160°C / Gas 4.
• 2. Empty the cake mix into a mixing bowl and add the eggs, milk and oil.
• 3. Mix with an electric whisk for 2 minutes until smooth.
• 4. Divide the mixture equally into the tins and bake in the centre of the oven for 20-25 minutes until risen.
• 5. Remove from the oven and allow to cool in the tins for 5 minutes before turning out onto a cooling rack.

To make the cupcakes:

• 1. Pre-heat the oven to 180°C / Fan 160°C / Gas 4.
• 2. Place the cupcake cases into a muffin tin.
• 3. Empty the cake mix into a mixing bowl and add the eggs, milk and oil.
• 4. Beat with an electric mixer for 2 minutes until smooth.
• 5. Divide the mixture equally between the cupcake cases and bake in the centre of the oven for 15-18 minutes until well risen.
• 6. Remove from the oven and allow to cool for 5 minutes before transferring to a cooling rack.
