Rice noodles have long been used in Southeast Asian cuisines, but when paired with the salty, umami flavours of soy and fish sauce, tangy-sweet tamarind and zingy lime, a dish came into being that was uniquely Thai.

Preparation and UsageCooking instructions
If using chicken or vegetables, slice these.
If using tofu, cut into cubes. Slice the spring onions and whisk the egg.
1. Empty the noodles from large pouch into boiling water and cook for approx. 5 minutes, then drain and rinse under cold water.
2. Heat 1 tbsp oil in a wok or large pan until hot. Stir-fry the protein or veg for 2-4 minutes, or until cooked. Add the herbs and spices from the pouch (include chilli for extra heat) and cook for 30 seconds.
3. Move the protein to the side of the pan, add 1 tbsp oil and fry the whisked egg for 1-2 minutes, until cooked. Add the beansprouts and the spring onions.
4. Add cooked noodles, stir-Fry for 1 minute, stir in the sauce (small pouch) and cook for 2 minutes.
Serves 2 with fresh coriander, peanuts and a wedge of lime.
Please ensure food is fully cooked and piping hot throughout before serving. As appliances may vary, these are guidelines only.
If you don't like whole spices, grind these in a pestle and mortar and add them at step 2. Alternatively, if you left the spices whole, remove them with a spoon before serving.
