The Arneis grapes were fermented slowly to ensure the fresh, fruity flavour was maintained, with a small amount of CO2 reabsorbed during the process as the tank was hermetically sealed halfway through. The balance of crispiness mingled with a palate of melon and mineral overtones was achieved by removing malolactic conversion, adding to this wine's unique nose.
