An aromatic blend of spices, including coriander and cumin, black onion seeds, fennel seeds, fenugreek and Kashmiri chilli, to cook with onions, potatoes and tomatoes. Soften a diced red onion in 1-2 tbsp oil in a large, lidded pan. Stir in 500 g peeled, diced potato and the pack of Bombay Potato Seasoning. Add 400g tinned tomatoes, cover and simmer till thick, adding water if the mixture dries out. Serves 4
